Rawa Kesari/ Semolina Sweet

Ingredients

Ingredients for Sweet

  • 1 cup Rawa/Semolina
  • 3 tbsp Ghee/Clarified Butter
  • 2 cup Sugar
  • a pinch Food Color/ Saffron
  • 2 cup Water

Ingredients for Garnish

  • 1/2 cup Cashews Halved
  • 2 pieces Cardomon Powdered

Instructions

Sweet

  • Boil water in a saucepan.
  • In a separate pan, heat 1 tbsp of ghee and fry cashews. Remove cashews.
  • Add rawa to the same pan and roast till it turns light golden.
  • Add boiled water to the roasted rawa slowly little by little.
  • Keep stirring continuously until rawa is cooked.
  • Add sugar, saffron and the 1 tbsp of ghee and stir well.
  • When the mixture leaves the sides, stop stirring and bring it to low flame.

Garnish

  • Heat a small pan with 1 tbsp of ghee. Add cashews and fry until cashews turn golden.
  • Remove and add powdered cardamom to the sweet.
  • Stir and serve.

Notes

  • Take care while adding water. Rawa/Semolina has a natural tendency to absorb water quickly. It is important to stir well such that lumps are not formed.
  • Keep in mediumĀ flame while cooking this sweet.
