Carrot/Gajar Halwa is that one sweet that makes me feel good every-time I eat it. Oh well, I love all sweets but I can eat this one without feeling too guilty about the calories consumed. As a kid, I was told that carrots are extremely healthy and so, recently I found a better way to consume them! And also, there is a myth that says you can see in the dark if you eat a lot of carrots – You see? it has a lot of Vitamin A. And in a way, this sweet is a healthier choice because carrots naturally are sweet so you don’t need large amounts of sugar to make it. Just make sure that you buy fresh juicy carrots and this sweet will turn out just right!

Carrot Halwa
Servings 4 people
Ingredients
- 3 cups Carrots grated
- 3 cups Milk
- 2 tbsp Ghee/ Clarified Butter
- 1 cup Sugar
- 10 pieces Cashews
- 10 pieces Raisins
- 2 pieces Cardomom
Instructions
Preparation
- Wash and peel carrots. Use the wide coarse side of the grater to grate the carrots.
Cooking
- Heat milk in a large pan and add grated carrots.
- Keep stirring the carrots until most of the milk is absorbed.
- Add sugar and ghee and stir well.
- In a separate pan, heat ghee and fry cashewnuts. Remove and set aside.
- Fry raisins in the same pan. Remove when raisins puff up
- Add the fried cashewnuts and raisins to carrot halwa. Top it with powdered cardamom.
- Stir and serve hot or cold.
Notes
- Raisins get fried faster than cashews. Its better to fry them separately.
- The key is to keep stirring while making this halwa to prevent it from burning. Keep in low to medium flame while cooking.
